Chantilly Potatoes

This is rich side dish, that goes well with roasted chicken, or
grilled steaks. The potatoes are rich and creamy, and has a nice
savory flavor.

Its also a great way
to turn leftover Thanksgiving mashed potatoes into something amazing.


Serves 8

4 Cups of Mashed Potatoes
1 Cup of Heavy Whipping cream
1 Can of French Fried Onions
2/3 Cup of shredded cheddar cheese, or smoked, or even parmessan cheese
1/2 Teaspoon of Sea Salt

Garnish with Chives and Smoked Paprika


Prepare mashed potatoes as directed. When I make mashed potatoes I use gold potatoes, because they have a rich sweet flavor. Sprinkle a 1/3 can of onions at the bottom of a greased 1 1/2 quart casserole dish. Mix the remaining onions with the potatoes and place in the casserole dish. Whip the heavy whipping cream until it becomes thick and fold in the cheese, add the salt and spread over the potatoes.

Bake at 350 Degrees for 30 minutes.
