Chocolate Coca-Cola Cake

The leaves are turning brown, and the cool temperatures are back. Just before Halloween,
I like to decorate the house with some fun lights, and spooky decorations. As a tradition,
I make this Chocolate Coca Cola Cake, to bring in Halloween. Its really good.

Ingredients For the Cake

2 Cups Unsifted Unbleached All Purpose Flour
2 Cups Sugar
2 Sticks of Butter
3 Tablespoons of Ghirardelli Unsweetened Cocoa Powder
1 Cup of Coca Cola
1/2 Cup of Buttermilk
2 Beaten eggs
1 Teaspoon of Baking Soda
1/2 Teaspoon of Sea Salt
1 1/2 Cups of Miniature Marshmallows

Frosting

1/2 Cup of Butter
3 Tablespoons of Ghirardelli Unsweetened Cocoa Powder
6 Tablespoons of Coca Cola
2 Cups of Powdered Sugar
1 Teaspoon of Vanilla Extract
1/2 Cup of Walnuts Chopped

Directions

In a medium size mixing bowl, combine the flour and sugar. In medium sauce pan, heat the butter, cocoa and cola until it boils.
Next pour over the flour mixture, and mix. Add all the remaining ingredients except the eggs, and buttermilk. Once the mixture has cooled
then add the buttermilk and the eggs.

Pour the mixture into a greased 13 by 9 inch pan. Bake at 350 for 40 minutes. Check for doneness by inserting a toothpic in the cake, and when it comes out clean, its done.

Frosting Directions:

In a medium sauce pan, bring the butter, cocoa, and cola to a boil. Add the mixture to a medium bowl with 2 cups of powdered sugar,
and mix well. Add the vanilla extract. Then once the cake is cooled, frost the cake and sprinkle the walnuts on top. Or you can power it over the slightly warm cake, and smooth, with a spatula. Serves 12
