Strawberry Cream Cheese Glaze Pie


Summer is the season for fresh strawberries.
There are several things I like to make
with strawberries. Today I’m going to make  Strawberry Cream Cheese Glaze pie.


Frozen 9 inch Pie Shell,Ingredients:

6 Cups of Fresh Strawberries

1/8 Teaspoon of Vanilla Extract

1 Cup of Sugar

3 Tablespoons of Corn starch

1/2 cup of water

1 Package 3 ounces of Cream cheese softened or you can use,
melted white chocolate chips or dark chocolate at the bottom.

Bake your pie shell according to the directions on the package. They usually have
two sets of directions one for baking it blind or with filling. After your pie shell is finished
baking put the pan on a baking rake to cool.

Wash the strawberries in cold water, and pat dry.

Mash enough strawberries to measure to one cup. Use a potato masher, it works the best.
Sometimes I use the food processor for this step.

Take the rest of the strawberries and cut them in half. Save the best slices for
the top of the pie.

Next take a medium sauce pan,stir in the sugar and cornstarch, stir the mixture
until its well mixed. Gradually stir in the water, and mashed berries.

Cook this over medium heat string constantly so it won’t
catch on the bottom of the pan. Keep stirring until the mixture
thickens and boils. Add the  teaspoon of vanilla and stir.

Continue stirring and let it boil for about a 1 minute.

Beat the cream cheese with a small hand mixer, until
smooth. Spread this on the bottom of the cooled pre baked
pie shell and add the berries.

Pour the cooked glaze over the top. Do it slow. It can
over fill quickly and spill. So I put the pie on a cookie sheet,
in case for spills.

Chill for 3 hours before serving.
